"Conveyor Belt" sushi is a very popular way to sample sushi...the chefs make a piece of sushi, put it on a little plate, set the plate on the conveyor belt, and the patrons select from the plates which pass in front of them at the sushi bar. The bill is determined by the number of empty plates (and which kinds of plates) you accumulate. Most sushi will be on the same kind of plate. More expensive sushi is served on different plates which have a higher price tag. Fun!
